Moin, moin! Ich melde mich hier auch mal aus Hamburg zurück! Eigentlich wollte ich mich noch vor Abreise melden, aber irgendwie hat das zeitlich alles nicht mehr so ganz geklappt. Meine to-do-Liste war irgendwie total lang und da passte der Beitrag einfach nicht mehr dazwischen. Am Montag hat mich dann wieder voll die Arbeitswoche gepackt und viel Zeit für den Blog blieb leider auch nicht. Am Wochenende bin ich dann schon wieder unterwegs und besuche meine Eltern in der Heimat.
Deswegen gibt es heute ein schnelles und einfaches Cookie-Rezept. Die Kekse kann man auch schnell mal nach der Arbeit in den Ofen schieben. Auch nicht übel wenn was einfach geht und dazu noch lecker schmeckt, oder?
Erdnussbutter-Schoko-Cookies
Zutaten:
100 g weiche Butter
175 g brauner Zucker
1 Ei
125 cremige Erdnussbutter
175 g Mehl
50 g Kakao
100 g weiße Schokolade
60 ml Sahne
Zubereitung:
Butter, Zucker und Ei in einer Schüssel mit dem Rührgerät schaumig schlagen. Zunächst die Erdnussbutter einrühren und dann Mehl und Kakao zufügen.
Auf einer leicht bemehlten Arbeitsfläche zur Kugel rollen und in Frischhaltefolie einwickeln. 30 Minuten im Kühlschrank kalt stellen.
Zwei Backbleche mit Backpapier auslegen und den Ofen auf 180 Grad Ober-/Unterhitze vorheizen.
Den Teig in 16 Stücke (je ca. 40 g) aufteilen und mit den Händen zu Kugeln rollen. Die Teigkugeln mit Abstand auf das Backpapier legen und mit der Handfläche flach drücken (ca. 1 cm dick). Dann mit dem Daumen in die Mitte eine Mulde eindrücken. Im Ofen ca. 15 – 18 Minuten backen.
Aus dem Ofen nehmen und gleich noch einmal die Mulden vertiefen (z.B. mit einem Kochlöffelstiel). Dann auf dem Backblech etwas abkühlen lassen und dann auf ein Kuchengitter zum vollständigen Abkühlen geben.
Die Schokolade klein hacken. Die Sahne in einen kleinen Topf geben und zum Kochen bringen. Die Schokolade zufügen und ständig rühren bis die Schokolade geschmolzen ist. Circa eine halbe Stunde abkühlen lassen bis die Schokolade wieder etwas dicker wird und dann die Schokolade in die Kekse füllen. Ich hab die Kekse dann noch mit Schokoherzen dekoriert. Etwa 2 Stunden antrocknen lassen.
Die Kekse lassen sich etwa 3-4 Tage im luftdichten Behälter aufbewahren.
